I can’t think about the chocolate-mint combination without instantly going to Girl Scout cookies. Thin mints are seriously one of the best cookies ever. I don’t know how many sleeves of those I’ve eaten in my lifetime, but would you believe me if I told you that I can’t remember the last time I had one? Honestly, I have no clue. It’s probably been a couple of years. Or more! Huh, I’m suddenly craving boxes and boxes of them!
I do remember one of the last times I ate Samoa cookies though. They are my favorite Girl Scout cookie. I’ve loved them since I sold them as a Girl Scout myself, and they were still called Caramel Delites.
But anyway, after attending a hockey game, my wife and I were leaving the building to head to the car. And there they were. We were starving, and I’m pretty sure these cute little miniature sales ladies (ie. girl scouts) knew it. There was no way we could say no to the Samoas.
And so we did it. We bought the box. And then… we were stuck in traffic. Real food was at least an hour away at this rate. We didn’t mean for it to happen, but within the course of the next 30-45 minutes, we put down an entire box of Girl Scout cookies! Man, they totally got us!
Okay, but back to the whole chocolate-mint thing. It’s one of my absolute favorite flavor combinations. Mint Chip ice cream. Mint Oreos. Chocolate Mint anything and everything, and I’m all over it. So, since today is National Chocolate Mint Day, I knew I had to bring you something that was super flavorful with a healthy spin.
And that is when this Chocolate Mint Layered Smoothie was created. It’s full of greens, but let me tell you – there is nothing “green” tasting about this smoothie at all. It tastes like a wonderful dessert – you won’t even know that it’s packed full of nutrients to give you energy throughout your day.
- 1 to 1.5 frozen banana
- 1 to 1.25 cups of milk (I used almond milk – you pick your fav)
- 1 small handful of fresh mint leaves , stems removed
- 1-2 handfuls fresh spinach
- 1/4 teaspoon mint or peppermint extract
- 1 scoop vanilla protein powder
- 2 cups ice
- 2 Tablespoons cocoa powder
Combine all ingredients, except cocoa powder, in a blender. Blend until all combined.
Pour half of the mixture into a large glass (not your serving glass)
In the remaining mixture that left in the blender, add the cocoa powder and blend until combined.
In your serving glass, layer the green smoothie with the chocolate smoothie.
To create more defined layers, be sure that your smoothie is quite thick and frozen. You can achieve this by adding more ice and making sure your banana is frozen.
