Let me tell you about my love of sandwiches and why they hold a special place in my heart.
Handful Fresh Basil
1 large tomato
pesto (fresh or canned)
Slice thick slices of both the mozzarella and the tomatoes.
Spread pesto on both sides of rolls. Layer mozzarella, tomatoes, and basil.
Place on a baking sheet open-faced under the broiler until cheese is just melted. It doesn’t take long at all, and you want to watch it carefully to be sure nothing burns.
Take it out of the oven and top with a small drizzle of balsamic vinegar.
