Gosh, I sure did take a little hiatus this week didn’t I? I don’t know what it was, but I just needed some time to enjoy my family, the last days of summer, and my birthday! I celebrated my 29th birthday on Tuesday, and of course I had to take advantage of the holiday weekend and just extend it right on through my fun day.
Let me just say. I used to really dislike birthdays. Well, let me take that back. I didn’t really dislike them, but they were just another day for me. I have now realized that I was just trying to convince myself that I didn’t care about birthdays until finally I just started believing it. In the last 10 years or so, no one has really made my birthday extraordinary, so to me, it was just another day. This year though, let me tell you. Never have I ever been as spoiled for my birthday as I was this year. From the time my honey got home from work on Saturday all the way through my birthday, I was really able to do whatever I wanted. I picked where we ate, what we did, what we drank (and even had my own personal bartender), when I went to sleep, how I spent all my time. I didn’t have to cook. I didn’t have to clean up. It was great.
And on my birthday, I was spoiled with some beautiful lilies that are making my front room smell just so lovely right now. My honey also made a delicious oatmeal chocolate chip cake to share with my family at dinner. It was so tasty! Everyone loved it. She also bought me a new coffee tumbler and a donut pan! I have been wanting both of these items for awhile now, so you can expect to see some donut recipes soon!
Well, as I said, I had a personal bartender over the weekend. My honey loves to make lots of different kinds of drinks, alcoholic or not. I thought it would be appropriate to pick up some Pinnacle Cake Vodka for the occasion and see what all we could do with it. There was a pineapple upsidedown cake cocktail, a rootbeer float cocktail, a coffee cake cocktail, and hm, at that point I guess I can’t remember what else! I think that’s a good sign, right?
No, I do remember one more, and it was probably my very favorite. The birthday cake cocktail which actually included a bit of dry cake mix. Oh it was so tasty! And because I know just how easily you can rack the calories up when you are drinking, I used a fat free half and half in place of the cream. Of course, there is still cream, but the milk part is fat free. Definitely a plus in my book.

Birthday Cake Cocktails
adapted from Pinnacle Vodka
Ingredients
1 oz. Pinnacle Cake Vodka
1 tsp. dry vanilla cake mix
½ oz. Coffee Liquor
half & half to fill glass (I used a fat free version)
sprinkles and whipped cream, for garnish (optional)
Instructions
Shake all ingredients with ice and strain into a martini glass or champagne flute. Top with whipped cream and colored sprinkles if your heart so desires.

I’ve seen recipes similar to this one, but they all require milk chocolate liqueur as opposed to coffee — what was your reason for using the coffee-flavored variety? 🙂

reason #1: I’m a coffee addict
reason #2: It’s what I had on hand
reason #3: It didn’t make a huge difference in flavor, in my opinion

I love Pinnacle – Whipped Vodka. My husband and I had our first shot at my best friend's "White Affair" two years ago. Then, at a Seafood Feast, we had the cocktail "Birthday Cake." Delicious. I love the dessert recipe. And for my birthday this month…we will have the cocktail and the dessert.
