Ahh, can you believe we’re already planning our Thanksgiving meals? I feel like this year has just flown by and I’m in total denial that Christmas shopping should be happening now.
Halloween decorations came down yesterday, and they totally did not get enough facetime this year. I swear, next year I’m putting Halloween up in early September so I can enjoy it longer.
But that holiday came and went and now we’re ready to get everything planned for my absolute favorite holiday of the year. Thanksgiving!
First of all, I just love the family togetherness that comes with Thanksgiving. Everyone is feeling extra grateful. Everyone’s having great conversation. It’s just a wonderful time of the year.
But secondly (and almost a tie for most important) is the food! I love Thanksgiving dinner.
I bet that sounds awfully strange coming from a vegetarian, right? Well what do you even eat? Oh come on, as if you don’t already know that the sides are the best part of the dinner anyway. Give me mashed potatoes, stuffing, rolls, salads, and ALL.THE.PIE any day! This girl isn’t missing anything by not eating turkey! I can promise you that.
I know everyone in my family worries when it comes to Thanksgiving. Even though they see my plate piled high with all the sides, they still feel the need to ask, “did you find enough things you can eat?” Uh, really? You see this mound I’m trying hard to balance on my plate? Yeah, I think I got it.
But one thing that I do love is trying new vegetarian recipes that take my Thanksgiving meal to the next level.
And that is why I gathered a bunch of my ridiculously talented foodie buddies to help me compile the ultimate list of the vegetarian main dishes and sides to serve on Thanksgiving.
