Weekend Web Findings + a Super Berry Smoothie

Hey there YOU! It’s the weekend, and that means I get to bring you a bunch of randomness here on the blog. Before I do that though, I just have to tell you about an awesome experience I had yesterday. {also… super exciting announcement at the bottom of this post … so stick around till the end!!} First off, I had to get in a quick run. Nothing major, just a couple miles, and it was really hard for some reason. Anyway, and then I headed over to my yoga class, which was absolutely great! I can see so many improvements in my balance and flexibility. I’ve come a long way since I started last fall. Okay, well that’s not the awesome stuff I wanted to tell you about.

After yoga, I headed just a few blocks south where the Salt Lake City Marathon finish line was. One of my greatest friends, who also happens to be a co-worker, was running in her first ever marathon, and I had calculated her estimated time with the start time, and I was thinking that she may be finishing up right around that time. So I found a place to park and booked it over near the finish line. I texted to ask her if she had finished yet, and I figured that no response was a sign she hadn’t. So I waited and waited as other athletes made their way through to the final stretch. I just have to say… WOW! What an accomplishment these people have made. So many of the runners came through with grimaces on their faces and pain in their legs as they hobbled their way to the end. What determination. It was at that point, while watching these runners achieve greatness, that I knew I needed to do this in my life. It won’t be next year, and it probably won’t be the year after that. But right here and now, I’m going to make a goal to run a marathon before I’m 40. (that’s 10 years from now … and yes, I’ve have revealed my age.)

So anyway, I decided I would walk farther back from the finish line and see if I could meet up with my friend as she was making her way. About a block or so down, I saw her walking down, and I was just so excited to see her. She didn’t know I was going to be there, so she was surprised as well. She had been having knee pain since mile 10, and it had been raining all morning, so it was a rough 26.2 miles for her. I walked with her until she got close to the very end, and then I got back on the side-walk and jogged along with her cheering her on. I met up with her mom and husband who were cheering as well. Very cool experience, and I couldn’t be more proud of her and all the other athletes who ran the Salt Lake 1/2 and full marathon.

What did you eat after you worked out this week?

Alright, I had mentioned to you guys about a week or so ago that I love to cook and create awesomeness in the kitchen on Saturdays. I just have such a good time coming home from my workout and putting something yummy and creative together. It is generally something very simple. It is generally just a one-person meal. But I thought, why don’t I share my simple little lunches with you! Sometimes it may be as simple as an egg sandwich or oatmeal. A ton of times, it’s a smoothie, like this week. But regardless, it’s something easy that you can do for yourself as an after workout meal.

This week, you’ll see that my smoothie is a very hearty smoothie, packed with oatmeal, chia seeds, flax seeds, and a ton of fruits and berries. On Saturdays, I usually only eat 2 meals, so I am sure to make sure they pack a punch and get me through the day.

Super Berry Smoothie
Ingredients
  • 1/4 cup oats
  • 1 Tablespoon ground flax seeds
  • 1 Tablespoon chia seeds
  • 1 scoop vanilla protein powder
  • 1/3 cup fat free vanilla yogurt
  • 3/4 cup cold water
  • 1 small orange
  • 8-10 frozen strawberries
  • 1 banana frozen
  • 1/3 cup frozen blueberries
Instructions
  1. Place all items in a blender in the order listed.
  2. Blend on high speed until the smoothie is well combined.
  3. Enjoy right away or place in freezer for half an hour to achieve a thicker smoothie.
Recipe Notes
If you are not using frozen berries and bananas, feel free to add 6-10 ice cubes.

Super exciting announcement time!

Alrighty, so I promised you all for an exciting announcement, and here it is. Tomorrow morning (4/22/13), I am going to be making my television debut! That’s right… I will be on a local lifestyle television show, called The Daily Dish. It airs on ABC at 11am, and I am so excited to be on the show, talking about my little space here. If you’re local, I’d love for you to tune in. Or you could always DVR it if you can’t watch it live. And once it gets posted online, I’ll be sure to post the segment. Ahh, I’m so excited/nervous/anxious…. Not even sure what I’m going to wear! Eek! Wish me luck guys – I appreciate all of your support that has gotten me to this point! You all ROCK!!
