Thank goodness it’s the weekend, right? This weekend is the first weekend I had my son with me. For the summer, we are going from having Xander Monday through Friday to having him just on the weekends. After spending an entire Saturday with him and doing things together, I’m realizing that we just need more of these non-routine days to start building a better relationship. There was no arguing. No battling, like most days. No whining. Just fun and laughing. We started the day at the gym, where Xander got to spend a couple hours playing at Kid’s Club. Then it was lunch on the patio (where I enjoyed this amazing smoothie I’m going to share with you). Then we churned some delicious frozen yogurt (which will be shared with you soon enough). Headed to the library, where we picked up a few books. One of the books I picked up may have been something along the lines of “What to Expect BEFORE You’re Expecting.”  Just sayin’…

My point is… I could really get used to this getting along with my kid thing. Now his dad and step-mom can deal with monster routine Monday through Friday Xander, because I freakin’ need a break!

So, this smoothie I mentioned. It’s simple, but so delicious. I paired it with a simple bean & quinoa burrito (using homemade refried beans from Chef in Training…. YUM!). When I’ve just completed a workout, I usually start with the same base on all my smoothies. Oatmeal, protein powder, flax seeds, chia seeds, water, and nonfat yogurt. Once you have the base, you can customize the flavor to your liking. I used a combination of fresh pineapple, a medium peach, and a banana, and it was deLISH! Perfectly satisfying for my Zumba + Yoga workout.

Ingredients
  • 1/3 cup old fashioned oats
  • 1 scoop vanilla protein powder
  • 1 teaspoon ground flax seeds
  • 1 teaspoon chia seeds
  • 1/3 cup nonfat vanilla yogurt
  • 1 cup water
  • 1 banana , frozen
  • 1 medium peach , pitted
  • 1/2 cup fresh pineapple chunks
  • 4-6 ice cubes
Instructions
  1. Combine all ingredients in a blender in the order listed. Blend on high for about 30 seconds, or until all combined.
