Weekend Web Findings + Cheesy Veggie Melt

Happy Cinco de Mayo to you! How are you celebrating? Chips and Salsa? Guac? Or delicious adult-like drinks? I’m sure I’ll find a way to celebrate in all of these forms. A possible siesta (that means nap….) may be in order as well.

No but really, this weekend has been strange for me! I woke up SUPER early on Saturday, and so did my kiddo. I was insanely tired and opted out of yoga, in exchange for an afternoon bike ride. During my normal yoga time, I decided to make a super delicious brunchy sandwich, and take it out on the sunny balcony to eat. It came together in just a few minutes. Let me share it with you, okay?!

Cheesy Veggie Melt
Ingredients
  • 4-5 mushrooms , sliced
  • 1/2 green pepper , sliced
  • 1 Morningstar Soy Breakfast Sausage , thawed and diced (optional)
  • 1/4 cheddar cheese , shredded
  • 2 slices whole wheat bread
  • 1 Tablespoon olive or coconut oil , for pan
Instructions
  1. Heat frying pan to medium-high heat, and add oil.
  2. Once hot, add vegetables a soy sausage, if using. cook for about 5 minutes, tossing every so often, until veggies are tender.
  3. Top with cheese and cover until melted.
  4. Place mixture between sandwich bread, and place back on the pan. Fry for about a minute on each side, just to brown the bread a bit.

Seriously an easy and delicious brunch.

After that, I read a bit of my book. (For those interested, I’m reading The Kill Order. It’s the 4th book in the Maze Runner series…. seriously amazing and twisted!) I lasted about 15 minutes before I was out for the count. I think I napped for about 2 hours until the Mrs got home and we went for a bike ride. It was so nice out today. A little overcast and a slight breeze, but perfect for riding. We are definitely planning on more of these biking adventures this summer!
