You’ve probably never noticed but I have zero eggnog recipes here on the blog. There is a reason for that.

Traditional eggnog 100% totally grosses me out. The thick texture of it. The idea of raw eggs in my drinks… blegh. There is nothing about eggnog that gets me excited, except of course for the actual spices in the drink. The nutmeg. The vanilla. Those are flavors I can get behind.

So when I found out that Silk, my favorite dairy-free brand, came out with an Almond Nog (ie, no eggs or dairy!), I couldn’t jump on board fast enough, and I knew I was going to transform it into a hot drink!

And it couldn’t come at a more perfect time.

You see, just a couple days ago, less than a week before Christmas, I found out that I would be hosting my family’s Christmas Eve dinner. Fun, right? Yes, totally! I’ve been waiting for my entire adult life to finally have a home that we could host everyone in. I love nothing more than making dinner and dessert to share with my loved ones and can’t wait for it to finally happen in my own home.

The only problems… I’ve never done this before and the house is a wreck… A SERIOUS wreck! So I’ve been frantically cleaning, straightening, and decorating as best as I possibly can without much of a break.

My dining room has been taken over by all my photography props, and we barely squeeze in there every night for dinner. The kitchen cabinets are overflowing with a ridiculous amount of baking supplies and ingredients. I’m afraid my mom will open one cabinet and it will all come spilling out on top of her. The fridge… well I’m not quite sure the last time I truly cleaned it out.

Suffice to say, there is a lot to do in the next couple of days, but at the same time, more than anything, I really want to enjoy the holidays. I want to take time for myself. I want to play games with my son. In fact, just tonight I set up an out-of-office reply in my email for TWO WHOLE WEEKS just so I can breathe a bit!

That is exactly what I will be doing with my Vegan Eggnog Chai Latte every morning this week. Taking time to breathe and just be. I will savor every warm sip before all the crazy of the day starts.

It will be my me-time full of holiday cheer.

Vegan Eggnog Chai Latte
Ingredients
  • 8 ounces Silk Almond Milk Eggnog
  • 2 tea bags of chai tea
  • 1/2 cup strong coffee or espresso
Instructions
  1. In a small saucepan, heat dairy-free eggnog and 2 tea bags over medium heat, never allowing it to come to a boil. Stir often.
  2. As soon as eggnog begins to form little bubbles and it is just about to start simmering, remove from the heat. Remove tea bags from eggnog.
  3. Pour strong coffee in a mug and top with the chai spiced eggnog. Serve immediately.
Recipe Notes
Feel free to use a frothing machine to whip the eggnog in order to add more foam to your latte.
