Yes, I went there. I took a perfectly healthy breakfast food and turned it into a delicious treat. I’ve heard from so many people that they just don’t like oatmeal. No matter what they do with it, they just can’t make it tasty. This, my friends, is definitely a tasty oatmeal that you will enjoy from start to finish. Now, I wouldn’t necessarily get in the habit of eating this for every breakfast meal, but maybe just when you’re in the mood for something a little more decadent in the morning – perhaps a Monday. Mondays deserve indulgent breakfasts.
If you followed me over from Mama Hen’s Kitchen, you may remember that I started an Ingredient of the Month “challenge” of sorts. Basically, I think up an ingredient and feature a few recipes based on that one ingredient throughout the month. This month, I chose to feature my favorite Girl Scout cookie, Samoas. I made Samoa Cupcakes and Samoa Cookie Bites. I did also attempt some Samoa frozen yogurt, but it was kind of a flop. Needs a little tweaking. Have you made anything based on a Girl Scout cookie lately? I’d love to hear about it. I’m sad that my Samoa month is coming to a close, but I’m also excited for next month’s featured ingredient. I’ve decided on a fresh and spring-like ingredient and I just can’t wait to share it with you.
I present to you the last installment of Samoa Month!
2/3 cup old-fashioned oats
3 caramel squares
small handful of chocolate chips
small handful of coconut
1 1/3 cup water
Combine all ingredients in a large cereal or soup bowl. Microwave for about 4:30, watching to be sure it doesn’t overflow!
Once cooked to your preference, stir together to be sure the caramel gets distributed evenly. Add a splash of your favorite milk, and enjoy!
