There is one type of food that my family loves, and it’s probably very similar to the things your family loves. Sweets! Candy and cookies and cakes and brownies. My kiddo just wants it all! He would opt for a tiny piece of candy over a full healthy meal that would fill him up.

Thankfully, this past week, I got the opportunity to try Outshine’s Fruit & Veggie Bars and share them with my family. Oh.My.Goodness, you’d think it was Christmas morning in our house. Today I am starting something new here on Happy Food Healthy Life that I’m so excited about. I want this site to be your one-stop health-related website. A place where you will come to get healthy recipes, words of motivation, nutrition information, and of course exercises and fitness advice. I’m not a doctor, nutritionist, or personal trainer. But what I am is resourceful and experienced. With those two things, I’m able to gather some of the awesome resources that are tried and true to me and share them with you so you can be on your way to a happy and healthy life as well.

You know it’s coming, whether you like it or not. Maybe it’s still hot in your neck of the woods, but more than likely, you will be experiencing  colder temps in the near future. Unless of course you are a lucky being who lives in a climate where it’s warm year-round. And in that case, I’m not sure you and I can be friends anymore. No, I’m kidding.

The thing is, so many people just assume that once cold weather hits, they will throw on their warm hoodies and begin the hibernation process for the next few months. No worries about their activity levels. No stresses about the extra holiday goodies. Just basking in the fact that they don’t want to be uncomfortable in the cold weather.

If there was one thing I could do in this life for my family, it would be to get them to make healthy choices so that they could live a long life full of health. For themselves, for our future as a family, and just for their future success in life. I know this sounds heavy and all, but I have made conscious decisions about the reasons why I choose to life meat-free and eliminate a large amount of dairy. Today is a special day. For a couple of reasons actually. First and foremost, I have to say a big huge Happy Anniversary to the love of my life. Today, three years ago, we committed ourselves to each other in front of our friends and family. Not a day goes by that I don’t feel extremely lucky to be her wife and spend the rest of our days together. She does so much for me. Helps me around the house. Takes on a little extra with my kiddo so I can get more things on the blog done. And she especially brings me amazing mugs of coffee. I’ve told her many times – coffee truly does taste the best when she has made it … and brought it to me while I’m still in bed preferably.

Want to hear something weird? I don’t think I had ever tasted a plum before in my life until earlier this week. That’s right. 31 years, and I’ve never tried a plum. Now,  I did not live a deprived childhood. In fact, I remember my mom eating plums, and for some reason, I just had no desire to partake. Fruit’s not my thing. I mean, I eat fruit, but the majority of my fruit gets blended up with my Blendtec into a delicious smoothie.

Turns out though, I’m kind of being forced into the whole fruit thing whether I like it or not. A couple weeks ago, we finally took and plunge and signed up for our neighborhood produce co-op. I am making it more of a goal to partake in more fruits and veggies and to base meals of the foods we are given. They’re mostly local, and they’re organic. At only $17 a week for a TON of produce, I can’t complain.

There is truly not a more comforting food than warm cookies on a fall day. Well, except for grilled cheese, chili, brownies, cornbread…

Okay, but really. That first pumpkin-y harvest-y dessert when the chill hits. That slight chill that just makes you want to stay in the kitchen all day and bake things that smell like autumn spices. That scent that has your kids and your spouse wandering in sniffing their ways to the kitchen wondering what sort of magic you are making.

Here’s the thing. I’m not 100% ready for pumpkin. But I’m ready for cinnamon. And apples. And caramel. Those earthy warm flavors that just get you warmed up for the season. And that was why I made the pumpkin sandwich cookie an alternate option. If you’re not feeling the pumpkin either, these cookies are mighty fine on their own.
