This week, we’ve been talking about quinoa and how good it is for you, as well as how versatile that little seed is. Oh my goodness. I don’t even know where this idea came from. Seriously, who thinks of turning quinoa into a dessert? Well, if anyone’s going to do it, it’s gotta be me. I’m the girl who just doesn’t like to say no to sweets. I can do it. I have the self-control to say no. But I have no desire to. If I want it, and I’m feeling like it’s time for a snack, I’m gonna go for the dessert. So the solution is this: making my own desserts at home and controlling what goes in them. I’ve been eating this stuff before it got popular in 2012-2013. As soon as I found out that I could get a ton of protein from this super versatile gem, I was completely sold. As a vegetarian, getting enough protein can be difficult. Well, at least for me. I’m against reading labels. I eat what sounds good. I don’t keep track of how much protein/fat/carbs I have every day. So it’s still January, right? We are about halfway through the month, and the big question is: Are you still sticking to your goals? And Smoothie Week continues.

Let me tell you. This smoothie has kind of been my enemy this week. Here’s the thing. Who in the world schedules a VERY full work week the week before her spouse leaves for 8 MONTHS of military training?? Who is that dumb? This girl, right here. In my mind, when I was scheduling the week, I thought, “Oh, it’s just smoothies. I can whip those up in no time and throw a post together real quick. No big deal, right?” Wrong! Along with even finding the time to make a smoothie, there is photographing it (while trying to think of some new and creative way to style a smoothie), editing the pics, and then writing something interesting to grab your attention. Those things all take time. Time that I would much rather be spending with my wife before she leaves next Tuesday. (more…)

Healthy Peanut Butter Cup Smoothie

Boy am I glad I decided to make this week a smoothie week! I can’t tell you how much I just love smoothies. There are so many varieties and combinations. And when all is said and done, you can feel good about what you’re putting in your body because you know what the ingredients are, and you watched it all come together in your own kitchen.

Most of the time, my smoothies are fruit and veggie-based. All those nutrients. All the good stuff our bodies need. But sometimes, I get this craving that just can’t be fulfilled with fruits and veggies. (more…)

I love smoothies. Smoothies are totally my thing. I received a Blendtec a couple of years ago and have been obsessed with making thick and icy sweet treats that are totally good for me ever since. Spinach mixed with my berries? Yes ma’am! PB Choco? Absolutely! Almond milk and cinnamon? I’m game! There isn’t a healthy smoothie I would really turn down. They’re all amazing in my book.
