Lightened-Up Cake Batter Truffles

Birthdays are totally worth celebrating. But you don’t have to sacrifice birthday treats for the sake of staying health. Today we’re having our cake, and eating it too with these LIGHTENED-UP CAKE BATTER TRUFFLES.

Birthdays!! Who doesn’t love birthdays?? Okay, okay, so I know there are a ton of people who don’t exactly look forward to ticking up in age. But the way I look at it, birthdays are a fantastic excuse for sprinkles.

And before you get all “crazy-health-nut” on me about sprinkles, I’m just going to say one thing. All things in moderation. In eight truffles there is a total of 1 tablespoon of sprinkles. That’s nothing at all when you think about all the happiness you get just from looking at those colorful gems.

Sprinkles aside, I just want to talk to you about the 3 simple ingredients that go into these truffles.

Coconut (because duh – it’s my obsession)

Vanilla Protein Powder (because I can always use a little extra boost of protein)

Dark Chocolate (for it’s delicious factor + antioxidants)

You wouldn’t think that these three ingredients would form themselves into a freakin’ amazing birthday treat, but by some crazy miracle, they came together and tasted out-of-this-world amazing. Definitely a health-conscious treat suited for a birthday queen.

Speaking of birthday queens.

Today is my dear friend Aubrey’s birthday, and I’m so excited to be a part of her surprise celebration with all of her friends. You may not know, but I am a health & wellness contributor over at Aubrey’s site, Real Housemom’s. She really is an awesome businesswoman and is so inspiring to watch her grow her business into this powerhouse of knowledge and information for her readers.

She’s been so fun to work with over the last 6 months or so since we’ve been working together, and it’s just been fantastic to be a part of her growing community. It’s the least I can do to give back with these sweet little morsels of birthday goodness.

Serves serving size = 1 truffle

Lightened-Up Cake Batter Truffles

Save Recipe

Ingredients

  • 2 cups sweetened shredded coconut
  • 1 scoop vanilla protein powder
  • 1 Tablespoon sprinkles
  • 1 cup dark chocolate chips

Instructions

  1. In a food processor or high-speed blender, blend the shredded coconut for 15-20 minutes, scraping down the sides periodically. At first, just a powder will form, but by the end, you will have a paste once the oils are released from the coconut.
  2. Once you have formed a paste with the coconut, add the vanilla protein powder and blend until completely combined. Add a Tablespoon of sprinkles and mix in with a spoon or spatula.
  3. Using a small cookie scoop, press dough into a dome shape. You'll need to pack it very tightly in order for it to stay together. Place each dome on a small wax-paper-lined baking sheet.
  4. Place in the freezer for about 30 minutes, to ensure they keep their form. Once hard, it's time to dip them in chocolate.
  5. In a tall, deep, microwavable safe glass, melt the dark chocolate for about 30 seconds at a time, stirring in between. Once completely melted, place one truffle on a fork. Dip straight down into the chocolate and bring it right back up and onto the wax paper. You may have to drizzle a bit of chocolate over any missed spots.
  6. If you want to top with some sprinkles as garnish, be sure to do so while the chocolate is still melted. Place in the refrigerator for another 15 minutes to set.
  7. You can make these up to a day in advanced, but be sure to serve within a few days.
