Oh.em.gee. Peanut Butter. on everything!

I seriously have a bit of a problem, although it’s a problem I’m totally okay with having. I’m all about sitting down with a good book, a jar of peanut butter, a box of graham crackers, and a knife to slather those crackers with the good stuff. Don’t judge! This natural 3-ingredient peanut butter totally makes it okay.

Oh but yeah, speaking of curling up with a good book.

I’m freakin in LOVE with this series I’m reading. It’s cheesy. It’s captivating. It’s totally a young-adult novel. Again, no judging!

It’s the “Selection” Series by Keira Cass, and I can’t get enough of it. Think The Bachelor meets Hunger Games. There’s a selection process to choose the new princess, yet the main character is all “eff this shi… this is archaic,” and tries to find her own way through the process without having to conform to the norm. Any book with a roaring feminist is a winner in my mind!

But seriously, this book is messing with my sleep! I just want to stay up all night and read it!

So back to snacking while reading…

I literally love smearing spoonfuls of peanut butter on top of some of my favorite foods. Like I said, graham crackers are my numero uno, but yesterday, I possibly opened up an Oreo plopped a spoonful of this goodness in the middle, closed it back up, and put it right into my mouth. Freakin’ yum! And the list goes on… apples, celery, ice cream, any cookie in the world, and pretty much just right into my mouth works just fine too.

Oh, and let me tell you. This isn’t just regular peanut butter. First of all, let’s start with the stellar list of ingredients. THREE. Yes THREE whole ingredients. Every jar I looked at in the store had at least 6, and up to 10, ingredients. I sure don’t see the point in all that!

Secondly, who doesn’t love a peanut butter honey sandwich? With this honey peanut butter, you’ve got it all in one. Just spread it all on a piece of bread and you are good to go.

Homemade Honey Peanut Butter

Servings: 2 cups peanut butter
Ingredients
  • 2 cups peanuts , shelled, roasted, & salted
  • 1/4 cup vegetable oil
  • 1/4 cup raw honey
Instructions
  1. Place all ingredients in a high speed blender or a food processor. Blend together on high speed.
  2. It will take awhile for all the ingredients to come together into a paste, and you may need to stop to scrape the sounds down every so often.
  3. Using a Blentec, you can just use the twister jar to eliminate the need to stop and scrape the edges. The blender does that for you so you don't have to.
  4. Once all ingredients come together like peanut butter, scrape into a jar and store for up to 2 weeks,

    I have huge, HUGE “sweet tooth” (er I guess craving?) for peanut butter, but I have never thought to actually make my own. I may just need to try this next time I have lots of peanuts to use up!

      Yes you’ve got to! I totally hear ya. Would you believe me if I told you I have a jar of this just hanging out in my purse right now? As in, so I can just dig in with a spoonful whenever I feel like it? Yeah, it’s real haha.

    Hi Holly! I never keep vegetable oil in the house because I don’t like using it. Is there another oil I could substitute for it…..grapeseed oil maybe?

      I haven’t tried it with another oil, but I’m sure any would really do. You’ll have to let me know how it turns out for you!

      I haven’t tried it with other oils, but you’re welcome to try. The only thing is that coconut oil will harden when it gets cold and will make the peanut butter difficult (or impossible!) to spread. So you’ll want to keep that in mind when storing.
