Well hello there! Today we’re talking about snacking and how I can be a totally messy snacker.

Mostly because of the fact that I love love LOVE snacks like granola and trail mix… by.the.handful.

I have been known to munch on trail mix in the car while on road trips, and then we get to where we’re going, stand up, and realize that half the trail mix I was eating ended up all over the seat, my shirt, and my pants. And it never fails that there will be at least one smudge of chocolate on my shirt or pants. It’s actually kind of a running joke now.

“oh, there’s the chocolate. It’s not a complete outfit for Holly if there’s not a smudge of chocolate on it.”

Ha. ha. ha…

I’m totally not laughing because more than anything, it’s a little embarrassing that I can be so messy. So I came up with a solution. You see where this is going, right?

That’s right. I took all the trail mix ingredients and put them INSIDE the muffin! BRILLIANT (if I do say so myself)!

They’re perfect to grab as you’re heading out the door in the morning. They’re perfect for days you’re not going to be home to make a snack. They’re perfect to take to work with you for a mid-afternoon pick-me-up.

And in these muffins, there are only 1 or 2 dark chocolate chips baked on the top, so there is very little chance that they are going to end up on your clothes like they would in a handful of trail mix. Please tell me I’m not alone here.

  • 3 cups bran flakes
  • 2 cups almond milk (or other milk of your choice)
  • 2 Tablespoons ground flax seeds
  • 1/3 cup water
  • 1 2/3 cup whole wheat pastry flour
  • 1 cup oats , slightly ground - not into a flour
  • 1 teaspoon salt
  • 2 Tablespoons baking powder
  • 1 Tablespoon chia seeds
  • 1/2 cup sunflower seeds
  • 1/2 cup peanuts , chopped
  • 3/4 cup raisins
  • 1 cup unsweetened applesauce
  • 1/4 cup agave
  • 1/4 cup dark chocolate chips for topping , optional
