Let’s play pretend. I’m going to pretend that I am a super social person. I don’t have social anxiety. I don’t have problems following through with social plans. I have get-togethers in my home where I grill, serve wine and beer, and everyone’s laughing and having a good time. We’ll pretend I have more than just a lot of acquaintances who have never been to my house. Saturday nights would always be bustling. My friends would bring their kids over and they’d play with my kid until they’d played so hard they fell asleep on the couch and their parents had to scoop them up and quietly carry them out to the car so they wouldn’t wake them.

Why are we pretending? Well, because if I had a social life and was throwing a party, this Greek Dip would be made several times for said parties and gatherings. Instead, this was my dinner 4 nights in a row…

Let me be honest here. The internet has ruined me in some ways. I’ve been exposed to the internet since I was about ten years old. My dad is a computer programmer, and we just always had computers. This opened the door to chat rooms, AOL chat, message boards, so on and so forth until I made it to this awesome world of blogging. I learned at an early age how to have conversations at the tip of my fingers rather than with my voice. I could “LOL” without even so much as a smirk on my face. I didn’t have to really interact. I didn’t really have to feel. I just had to type. Sadly, this is my comfort zone.

So today that leaves me with some of the best friends I’ve ever had, miles and miles away, all over the world, yet only a keyboard and monitor between us. There is quite a comfort in that, yet at the same time, it makes me feel even more awkward, which gives me even more anxiety to hit the “publish” button on this post.

Although I may not be hosting any BBQ’s this summer, just know that if I was, you’d be invited, and I would be serving up this amazing Greek Dip for you all to enjoy. Layers of hummus, tangy Greek yogurt laced with fresh mint and cucumber, and topped with my favorite Feta cheese and tomatoes. It comes together in about 10 minutes, and it’s easily gobbled up in less the time. If you’re hosting a party, you’ll probably want to double this to satisfy your guests!

Healthy Greek Layer Dip

Ingredients

  • 1 cup plain nonfat Greek yogurt
  • 1/2 cup coarsely shredded unpeeled cucumber
  • 1 Tablespoon finely chopped red onion
  • 1 teaspoon fresh mint , minced
  • 1 cup plain hummus
  • 1/2 cup chopped , seeded tomato
  • 1/2 cup Feta cheese , crumbled
  • 1/4 cup chopped cucumber
  • 2 sliced green onions
  • 4 large whole wheat pita bread rounds , cut into wedges

Instructions

  • In a small bowl, stir together the yogurt, shredded cucumber, chopped onion, and mint. Set aside.
  • Spread hummus in the bottom of a 9-inch pie plate. Spread yogurt mixture over hummus.
  • Sprinkle with tomato and feta cheese, topping with chopped cucumber and sliced green onions.
  • Serve with pita bread wedges.

    1. yup, exactly! I’d much rather sit and listen to everyone. Definitely a better listener than talker. And my anxiety doesn’t help matters – the whole time people are talking, I’m trying to figure out how to word exactly what I want to say perfectly… and then when I do finally speak, it’s all jumbled. Oh geez, I’m kind of a mess lol!

  8. You’re not weird. Here lately, I attend more than I host. I’d like to host more, but can’t find the time. I love your dip. I heart hummus and tatziki sauce. I never thought to combine them in a dip. I’ll have to try this VERY soon. Thanks!
