I interrupt your normal viewing of Motivational Mondays for a special announcement:

Today is the 1 year birthday of Happy Food Healthy Life, and I couldn’t be happier to be making that announcement. A year ago when I started this whole blogging thing, I didn’t know what would come of it. I didn’t know if anyone would want to read what I had to share. I didn’t know if anyone would care about my journey from an eating disorder-ed hell to a happy and healthy life. I didn’t know if anyone would understand how I could consider myself healthy while still eating Tropical Hawaiian Brownies. It was all unknown. But I had a passion, and I had a voice. I couldn’t go my whole life with the knowledge and experiences I had within myself without sharing it with others who may benefit.  I told myself, if I could help just one person with their struggles with weight, emotional eating, and other related issues, I would be happy. Since I’ve made that goal to help just one person, I have gotten a number of emails and comments from so many of you, thanking me for helping you through a certain situation. And it is each and every one of those messages that just let me know in my heart that I am doing what I was put on this earth to do. To help you. To motivate you. To share my story.

In this year of blogging, I have learned so much about myself. I have stepped outside of my comfort zone. I have grown so much. I have met so many other amazing bloggers through a couple of conferences and online. I’m not sure where I would be without the friendship and support of each and every one of them.

I just want to thank every one of you who has been a part of making Happy Food Healthy Life successful in the last year. If you’ve read a post, commented on a post, drooled over a recipe, laughed over a video, related to a struggle, helped me with IT/coding issues, taught me something about blogging, listened to me complain or brag, stayed up late with me, or given me advice, I just have to thank you. You are why I’m here. You are why I blog.

And to thank you for your support in my first year of blogging, I’ve made you a treat. And a delicious one at that!

Now, I know we all love chocolate covered strawberries. But what if they were made into a cupcake? My friends, I have made it happen, and I’m so excited to bring them to my blogaversary party.

I started with my basic bakery-worthy vanilla cupcake. No filling. No fluff. Just pure deliciousness in a cupcake. I topped it with a chocolate ganache glaze and then topped THAT with a  100% delicious/tasty/decadent/nom-worthy fresh strawberry buttercream.

You guys, this buttercream is out of this world. I’ve never made anything like it. It was made with a method I had never tried before. It took about 20 minutes of whisking (thank all that is right in this world and all the stars that aligned to bring me my Kitchenaid mixer), and I wasn’t sure it would come together, but in the end…. ohhhh.emmmm…geee! YUM! It was totally worth the time and effort.

Chocolate Covered Strawberry Cupcakes

makes 24 cupcakes

Ingredients

{for cupcakes}
1 1/2 cups self-rising flour
1 1/4 cups all-purpose flour
1 cup unsalted butter, softened
2 cups white sugar
4 large eggs, room temperature
1 cup milk
1 teaspoon pure vanilla extract

{for chocolate ganache}
5 ounces semi-sweet chocolate chips
1/2 cup heavy cream
2 Tablespoons butter

{for buttercream}
5 large egg whites
1 cup granulated sugar
pinch of salt
4 sticks of unsalted butter, room temperature, cut into cubes
2 teaspoons vanilla extract
3/4 cup fresh strawberry puree
2 Tablespoons sugar

Directions

Preheat oven to 350 degrees F.  Line 2 standard muffin tins with cupcake liners.

In a small bowl, combine the flours and set aside.

In a large bowl, on the medium speed of an electric mixer, cream the butter until smooth.  Add the sugar gradually and beat until fluffy, about 3 minutes.  Add the eggs, 1 at a time, beating well after each addition.

Mix the milk and vanilla together in a small bowl.

Add the dry ingredients in 3 parts, alternating with the milk and vanilla mixture.  With each addition, beat until the ingredients are incorporated but do not overbeat.

Carefully spoon the batter into the cupcake liners.   With my small cookie scoop, I used two scoops-worth into each baking cup to fill about 2/3′s of the way full.  Bake in the middle of the oven until tops turn golden brown and toothpick or cake-tester comes out clean, about 18-20 minutes.

Cool the cupcakes in tins for about 15 minutes.  Remove from the tins and cool completely on a wire rack before icing.

While the cupcakes are cooling, place all the ganache ingredients in a glass bowl that you can place over a boiling saucepan of water, acting as a double boiler. Stir constantly until all ingredients and melted and incorporated. Dip tops of cupcakes into ganache and set aside to set while preparing buttercream.

{for buttercream}

In a food processor, puree fresh strawberries until smooth. Add 2 Tablespoons of sugar, mix together, and set aside.

Over a pot of simmering water, create a double boiler with the bowl of your stand mixer (or the bowl you will be mixing your buttercream in). Whisk egg whites and sugar into the bowl over simmering water. Continue mixing for about 5 minutes, or until all sugar is dissolved.

With whisk attachment of your stand mixer on high, whisk until egg whites form stiff peaks and the bowl is completely cooled. This will take quite awhile – about 15 minutes.

One square at a time, add butter while the mixer is continually mixing. Continue to do this until all butter is mixed in. Add vanilla. It will look loose at first, but don’t worry, it will all come together. To help it come together, you can rub an ice pack or bag of ice along the bottom of the bowl while mixing.

Once all together, add the strawberry puree. Mix until fully incorporated. Fill a pastry bag and pipe with a large round tip.

I also thought it would be fun to top with some of these words that describe much of what Happy Food Healthy Life is about.

      Thank you so much Kare! HFHL is truly my baby and it’s been so fun to watch it grow into what it is now.
      and for the record, the chocolate was DIVINE! (as in, my sister-in-law was licking the cupcake wrapper…)
