Blueberry Mojitos

It’s Friday!

I don’t know about you guys, but even though I had a short work-week, it still felt incredibly long to me. Luckily, I have another long weekend coming up. And luckily, someone invented delicious drinks such as these Blueberry Mojitos to top off a stressful week.

This summer has been one of the hottest summers I’ve ever had to endure, so ice cold and refreshing drinks are exactly what I have been craving all summer long. I remember kicking the summer off with my Lemon Meringue Pie Martini. Since then, I’ve tried some Beergaritas and other random mixed drinks.

Alcohol is definitely something that can pack on the calories faster than you can imagine, so when I make a specialty drink like this, I generally only have one glass. Just enough to be refreshing and take the edge off of a hot day. Make a couple and share with a friend.

If you have been following my posts for the last few weeks, you know that it’s Blueberry Month over here on Happy Food, Healthy Life. I’ve already brought you some health benefits of eating more blueberries. I have also made some blueberry quick jam and a healthy smoothie for you.

And I’m not finished yet. In honor of the upcoming weekend, I present to you this twist on a classic mojito. It’s sweet. It has a hint of minty-ness. And it just has summer written all over it!

Blueberry Mojitos

for blueberry syrup

1 cup sugar

1 cup water

1 cup fresh blueberries

for drink assembly

1/4 cup blueberry syrup (for each drink)

2 ounces light rum (for each drink)

fresh mint

juice of 1 line for each glass

8 ounces club soda


1. Combine the sugar and water in a small saucepan over medium heat. Bring to a simmer then stir to dissolve all sugar. Remove from heat.

2. Carefully transfer sugar water to a blender and add fresh blueberries. Process until smooth but still slightly chunky. Remove and transfer to a glass jar or tupperware. Place in fridge and chill until cool. Blueberries will rise to the top and you can just skim them off when ready to use.

3. When you’re ready to make your drinks, place about two sprigs of mint in each glass. Squeeze a lime over top and muddle (mix around) with the bottom of a spoon. Then, add 1/4 cup blueberry syrup, 2 ounces of rum, and finish each glass with club soda.
