Dinner-time is a rough one for me. Especially when I’m cooking for my family. My other half is a meat-and-potatoes kind of gal, and my son would eat pasta and pizza every night of the week if I made it. This isn’t all that conducive for my vegetarian + health-conscious self. I’m always trying to find a happy medium between the foods I want to eat and the foods my family wants to eat. If it was just up to me, I’d be serving up salads and roasted veggies on a nightly basis.

Today’s recipe is one that pleases both my health-conscious self and my pizza-lovin’ family. First of all, these mini pizzas are, well, MINI! This totally helps portion control. Generally when we order pizza from a pizza shop, we end up each eating anywhere from two to four pieces of greasy pizza. When you make these mini pizzas and pair them with a side salad or some veggies, it’s easy to just have one or two mini pizzas and feel satisfied. Secondly, when you use Weight Watcher’s string cheese instead of your normal mozzarella, you are making a much more health-conscious choice. Gone are the days of grease-laden pizzas.

I was so excited to try this cheese out. Cheese is my absolute weakness. I crave it all the time, and when it comes to pizza, the more cheese the better for me! But I know that too much cheese can be unhealthy because of the fat content and the large amount of calories that can add up quickly when you’re piling it on top. Each cheese stick is only 50 calories (and in this recipe, can be divided among 4 mini pizzas!), and although I’m not a calorie counter anymore, I am always aware of making smarter choices for my health.

You may be wondering the same thing I was wondering when I first heard about Weight Watcher’s cheese. How good could this taste? That’s definitely one of the number one concerns that most people have when looking for a healthy snack. Flavor. Let me tell you. I love it! It tasted just as great as other string cheeses I had tasted in the past, so I was even more thrilled to have this as an alternative!

With Weight Watcher’s cheese sticks, you don’t feel like you’re eating a diet food. You end up with the classic mozzarella flavor with 50% less fat than regular cheese sticks. And if by chance you are into the Weight Watcher point system, each cheese stick is only 1 PointsPlus value! I’d say that’s a great deal! And if you’re into different flavors, these come in a jalapeno and a smoked flavor as well! They both sound super delicious and I can’t wait to try them out.

Healthy Mini Margherita Pizzas

Ingredients

Whole Wheat English Muffins

Pizza Sauce

Fresh Basil

Grape or Cherry Tomatoes, halved

Weight Watcher's Cheese Sticks, sliced into 1/2-inch pieces

Instructions

  1. Preheat oven to 350 degrees
  2. Spread an English Muffin with a tablespoon or two of pizza sauce. Top with 4-5 tomato halves, a few leaves of basil, and a few cheese stick bites.
  3. Repeat for how-ever many people you are serving.
  4. Place individual pizzas on a baking sheet and bake for about 5 minutes, just to warm. Turn the broiler on to melt the cheese for about 1 minute or less. Keep an eye on it - the cheese melts quickly and the edges of the english muffins brown quickly.
  5. Enjoy with a side salad or fresh veggies.

      Wine is not a challenge for me. It’s easy – open the bottle, pour it in a glass (if I’m feeling fancy), and empty contents into my mouth ;)

      I know what you mean Becca!! I wanted to eat lots, but I had a salad on the side (actually it was more of a main dish salad) and only ended up eating 1 and a half of the little pizzas for dinner.
