I’m good at many things. Cooking & Baking. Staying motivated in my exercise. Giving others advice. Practicing yoga.

There are also many things I’m very good at. Keeping a messy apartment. Arguing with my 6 year old. Making beautiful stacks of paper all over the place.

The one thing that I am the best at though is that I am the best procrastinator there is.

That’s right. I put everything off until the last possible minute. Which is why you haven’t seen any red and pink hearts grazing the blog this season yet. For one, I’m not really a big fan of all the heart food and the red velvet. But on top of that, I’m just a really great procrastinator, so you’re going to get a super easy but adult-friendly and sophisticated dessert today, this Valentine’s Day.

Sure, there’s cream-cheese filled strawberries. And there’s chocolate-dipped strawberries. We’ve all been there done that right? But the other day while grocery shopping, my wife was hit with the most brilliant idea she ever did have, and I love her more and more this Valentine’s Day because of it.

“What if we get some super finely ground coffee and mix that into chocolate to dip strawberries in!?” Ahhhh! A woman after my own heart. And I think the cream-cheese filling lightbulb went off in our heads at the same time, which made this delight even more perfect!

Those who know me even just a little bit know that I am big into coffee and anytime I can get a coffee flavor infused into my dessert, I am one happy mama. So this Valentine’s Day, I offer you an easy dessert for you and your honey, or just yourself if you’d rather. It whips up in about 10 minutes and provides a sweet treat with little to no fuss.

Chocolate Coffee Cream Cheese Strawberries

makes 12 strawberries

Ingredients

12 strawberries, rinsed and hulled (cored)
1/4 cup super finely ground coffee
1 cup dark chocolate pieces
[for filling]
4 ounces fat-free cream cheese, softened
1/2 packet sugar free fat free white chocolate pudding mix
1 tsp vanilla
1/4-1/2 cup milk

Directions

With a mixer, cream the cream cheese until soft and smooth. Add in the pudding mix, vanilla, and milk. I would start with 1/4 of a cup of milk and add more until you get a consistency that is firm, yet soft enough to pipe into your strawberries. Scoop cream cheese mixture into a piping bag with a large tip on it. Pipe into cored (and dried) strawberries and set aside.

In a small saucepan boil water (about half full). Place medium glass bowl over saucepan and melt chocolate in bowl, stirring constantly. Once chocolate is melted, remove from heat and combine the finely ground coffee to the chocolate.

Dip dried strawberries in coffee-laced chocolate and place on a tray lined with wax paper. Continue to dip all strawberries. Place in the refrigerator for about 30 minutes or until ready to serve.

After you have spent the day giving yourself some love and pampering yourself, this is such a great treat to end your Valentine’s Day. It won’t leave you feeling heavy and full. And the extra added kick of coffee might just give you that extra jolt to keep you up all night … *wink wink*

    I make something like these too! In fact I am making them tonight with a champagne buttercream in them. Yours are so much prettier than mine : ) What a fun treat!

    These look so incredible–chocolate dipped strawberries are one of my favorite desserts, but adding cheesecake to them takes it to another level. :D
