2-Minute Single Serving Apple Crumble - a super quick and healthy snack that tastes just like dessert!

I am so proud to tell you that I did not actually create this recipe.

Why would I be proud to tell you such a thing?

Well, because a few weeks ago, my son (who is only 9, almost 10), came to me and asked if I could dice him up an apple like I would for an apple pie. Well of course I could do that (although I should maybe teach him some knife skills so he can slice an apple on his own soon). But then he followed up with, “and I also need some sort of granola-crumbly topping, some agave, and definitely some cinnamon.”

Wait, what?

This kid sure is creative. He loves making snack bowls full of lots of different combinations of his favorites crackers, popcorn, and nuts mixed together. He also loves mixing different juice combinations to figure out what tastes the best.

So I shouldn’t have been surprised when he asked me to pull out all the ingredients so he could make his own little dessert.

His words:

So I want something that tastes like an apple pie, but I don’t want to go to all the trouble of making a whole pie. I think these ingredients should work. How can we make the apples warm and soft like apple pie?”

Oh this boy is going to make one lucky lady very very happy one day. All he’s gotta do is scoop a creamy bit of vanilla bean right on top, and he’s golden. He’ll have that woman hooked for life. 

But until then, I’m the only lady he needs in his life, and I’m so totally fine with him whipping up this single-serving apple crumble for me in just 2 minutes flat.

2-Minute Single Serving Apple Crumble

Ingredients

  • 1 apple , diced
  • 1 teaspoon cinnamon
  • 1/3 cup granola (I used my Anything Goes Granola Recipe
  • 1-2 teaspoons raw honey or agave

Instructions

  • Add diced apple to a small microwave-safe bowl.
  • Top with cinnamon, granola, and desired amount of honey or agave for a little bit of sweetness. You’ll already get a little sweetness from the granola and the apple, so you don’t need much.
  • Microwave for 1 minute or until apples are soft and fragrant.
  • Enjoy!
